Staring at the Sun.

Wow.
It’s been well over a month since i actually typed and made a real post.

That said, I had an incredibly busy April.

Sarah and i spent a week in Chicago at the beginning of the month.

More details later, but in regards to food, restaurants of note we dined at:

Sepia (lunch)
TRU (dessserts)
Moto (“samples”, that turned into 7 courses… Thanks Ben!)
Blackbird (dinner)
Nacional 27 (tapas and cocktails)
Hot Doug’s (encased meats)

Upon arriving back in Louisville, I had to scramble to launch my new dessert menu:

Coconut “Panna Cotta” (with no gelatin), Yogurt, Passion Fruit, Jicama/Cucumber with Latin Flavors, S&P Brittle, Coconut and Toasted Oat Powder.

Chocolate Sesame Cake, Chocolate/Plum Wine Sauce, Sesame Crumble, Sesame “Granola”, Wasabi Ice Cream.

Chocolate Bread Pudding: Flavors of Old Fashioned Cocktail.
Preserved Cherry Puree, Orange Supreme and Peel – maserated in Bitters, Bourbon Ice Cream, Candied Pancetta.

(photos in a later post, video of the Coconut dish plate-up in the preceding post.)

Immediately after that was the Kentucky Derby week.
For those of you not in Louisville, imagine the craziness of Mardi Gras mixed with people with fat wallets, and everyone under the sun is dining out.

Most restaurants are booked up months out… we were no exception.

500 covers in 4 days (which is obscene numbers for us), left us all on a “work-high” by the end… but equally exhausted.

The Sunday after derby, Sarah and I spent the day outside and planted a small herb and tomato garden in my back yard (with more vegetables to be planted soon).

I started a part time morning job yesterday at a wine shop, partly to further my all-around career knowledge by learning more about wine and spirits, as well as developing more direct guest-service skills, by dealing directly with customers.

I also have a potential writing gig in the works for a local (online) food/dining blog.

I only wish i had more time to read these days.

Speaking of reading; i pre-ordered the Alinea Book this past weekend (i was waiting for the Alinea Mosaic to go live first). Since i then, I’ve been lost in the forums there… just reading, getting inspired, thinking… it’s an incredible resource.
I can’t wait until the book comes out.

I have a ton more to say about specific things, and photos to post as well, so perhaps i should draw to an end and go from there.
